Our traditional British livestock breeds have the old fashioned qualities that our grandparents remember. They are breeds that thrive in non intensive, natural farming environments. They don't need growth promoters, hormones or the routinely fed antibiotics that are currently the cause of national concern.

Because traditional breeds grow a little more slowly than modern ones, the meat develops better, truer flavour. Unlike the bland sameness of modern meat, the meat from every traditional breed has its own special qualities, just as different varieties of apples do. That is why rare breeds' meat is so valued by Britain's leading restaurateurs.

Its a curious fact...

At first glance, promoting the eating of rare breeds seems an odd way of conserving them. But, unlike wild animals, farm animals, rare or otherwise, have to pay their way. Farming is, after all, a business - and a difficult one at that.

Creating a market for rare farm stock, encourages current producers to keep more animals and other farmers to begin stocking them, thus building up the breeds. Deciding to rear traditional livestock also creates a unique breed of stockman - One who makes the animals welfare their top priority.

While some of their meat carries more fat than that on the shelves in supermarkets, we make no apologies for this. Fat naturally bastes the meat while it cooks, giving succulence and added flavour. Once the meat is cooked, you can always trim any excess, and fat on meat is not always the health concern that some would have us believe. For the health conscious, meat from traditional breeds usually carry  higher proportions of polyunsaturated fats that do not adversely affect the bodies' cholesterol level. As an added bonus, joints of pork carry delicious crispy crackling, and beef and lamb melt in the mouth.
